The Buffalo Chicken Quesadilla! Whoa

Ok if you wanna impress your man and ease your stress with a simple meal seriously....try this!

I got these GINORMOUS tortilla from my brother and sister-in-law from my Food Network inspired "cook off" I had for my birthday. (I will blog about that as soon as I get all the awesome food pictures from my mom:) I mean truly these are the biggest burrito tortillas I have ever seen in my life. I could use them as a blanket. They don't fit in any of my flat pans without draping over the edges!

We cannot waste them because that would completely defeat what we are trying to accomplish. BUT...I am not craving my every present taco ingredients. So I think about the staples left in my fridge. We're coming up on the last week of the month so the fridge is getting barren. This is what I got: pepper jack cheese, Frank's Hot Sauce, butter, and white onion. I was thinking over this at work of course so by the time I actually got home I was driven to make my meal happen. I knew I had 3 chicken breasts left frozen in the freezer.

Right when I got home I took out two GINORMOUS tortillas to thaw on the counter and then two chicken breasts in the microwave to thaw them out a bit. I tossed them in a put of water on the stove on high and let that go for 20 min. I chopped some white onion, sliced my pepper jack cheese, and when the timer went off took my chicken out to cool for a minute. I then shredded it all and tossed it in a bowl with the Frank's Hot and 1 Tbsp. of melted butter. I divided it up between the tortillas spreading it on one side of each of them. Then I layered the white onion and pepper jack on top of the chicken and folded the other side of the tortilla over all of it. I put it on a hot griddle at medium high heat with the chicken side down first letting it get nice and brown while the chicken heated through in the middle. Then I flipped it cheese side down so it can get REALLY melty with the hot chicken and the direct heat from the skillet. Slide it onto a cutting board and cut it like a pizza! It goes down really nicely by substituting salsa with Ranch!

Must haves in your fridge:
white onion!! (can't say it enough :)
Frank's Hot Sauce (so versatile)
Ranch
cheese (yes always)

Recipe:
Tortillas (you can use any size you want but it's gotta be white tortillas for this recipe)
Chicken breasts
1/4 c. Frank's Red Hot Sauce
1 Tbsp. melted butter
Pepper Jack cheese
white onion

Start off by thawing all your ingredients; chicken and tortillas if need be. (So your tortillas if you are smart and keep them frozen until you need them so they don't go bad!) Place the chicken breasts in a pot of water and put on high heat for 20 min. (Adjust if the water gets to high and foamy :) While chicken is boiling go take some time for yourself! When it's done take it out and let it rest on a cutting board. While it's resting chop up 2-3 slices of white onion however you like it. Then cut up a few slices of pepper jack. (Enough to cover the inside of each taco.) Then shred your chicken using two forks. The chicken should be cooked completely through. Toss that with the 1/4 c. of Frank's Red Hot and the 1 Tbsp. of melted butter. Place the chicken mixture on one side of each tortilla and then layer white onion on top of the chicken. Lastly, layer the cheese on the top and fold over the other side of the tortilla to make it look like half a quesadilla. Heat griddle so it's nice and toast but not too hot. (Generally medium high heat works best) and throw your quesadilla on chicken side down first. Wait till the tortilla is nice and golden brown, about 4 min. Then flip and follow the same procedure on the other side. Slide it onto a cutting board and slice up and serve with a side of ranch!
