Ok so before I start this blog my husband requested that I point out his "savvyness" with helping us stay on our budget. He used this awesome skinny spatula we have, specifically made for bottles, to scrape every last drop out of the Ranch bottle the other night when we were having pizza. Great work hunny! :)
So yesterday was a nice slow morning. I got the budget balanced, wrote my grocery blog that I've been meaning to get to since last week, cleaned the house up, and decided I was going to make lunch for my husband and I because he had been in a meeting all morning. I was going to make buffalo chicken sandwiches earlier in the week but then held off due to a busy week so I thought that lunch would be the perfect time to whip them out! I had all the things needed to make them delicious!
I got my chicken out earlier in the morning to thaw a bit. Here is my savvy tip of the day concerning chicken sandwiches. Usually I don't like chicken sandwiches that I make because the chicken breast to bread ratio is WAY to much protein to carb. So I decided to slice the chicken breast in half the long way which solved the problem beautifully and we only had to use one chicken breast for our meal. More for later! I threw these in a nice hot pan to get some crisp on them, put a little salt on them, and then cut off a few slices of my ever present fridge companion, the white onion! I cut up a few slices of cheddar cheese and thawed up two white hamburger buns in the microwave. I also realized I had some lettuce to use up in the fridge before opening up our new pack (lettuce, another must have fridge item:). The last of the lettuce wasn't the freshest it could be but it had enough snap to it and it wouldn't be noticed because of the nice crisp white onions already in there.
After cooking my chicken on both sides for approx. 5-6 min I doused them with a good helping of Franks Red Hot sauce which I happened to have in my cupboard! (Yay for lots of sauces!) After saucing up each breast I threw them under the broiler for approx 1-2 min until the cheese was all melty and delicious looking. I topped the buns with the cheesy chicken, topped it with the onion slices, the lettuce, and the mayo and wow! They were very delicious!! A little chips and salsa, a few grapes, and BAM, you got a meal.
Must have in the fridge!!!
white onion (can't say it enough)
lettuce (get romaine over the head of lettuce, more vitamins and better crisp)
cheese (all kinds! but the cheap stuff is just as delicious!)
Recipe:
hamburger buns
1 chicken breast thawed
cheese slices (your preference of cheese)
2 lettuce leaves
1 slice white onion (cut in half)
2 Tbsp. Frank's Red Hot Sauce
mayo
salt
Start by slicing your chicken breast in half the long way to make two thinner breasts. Throw them in a pan on medium high heat and put a little salt on each side. Let them cook on each side for about 5-6 min to get a nice brown and cook through. Top with Red Hot sauce, approx 1 Tbsp each breast. Lay the slices of cheese on each breast and place under a broiler for about 1-2 min. (Make sure your pan is all metal so that it is oven friendly!) Take out of the oven and immediately top with the white onino slices, lettuce, and a good squirt of mayo! Yum is all we had to say :)
