Even when you're sick you still feel like snackin!

This post is going to be short and sweet. I have had a nasty cold that's had me down and out for the last week and due to that I haven't done much cooking. But just because I'm sick doesn't mean I don't want to have good snack still when I can. My parents brought me over some amazing chicken tortilla soup from Panera along with Hawaiian Rolls, medicine, movies, and chocolate. (You just can't beat amazing parents.) The other night I got a hankering for some good food so I decided to look in my fridge and figure out what I could make for my snack because I needed something FRESH to give me a pick-me-up.

I had bread I had some loaves of that homemade bread I had made previously frozen so I decided to thaw out a loaf and make me some grilled cheese. But then I noticed that I had onion and tomatoes from my father-in-law's garden so I thought I'd put that on as well! Then I grabbed some fresh basil from my garden to lay on top. I decided to layer it all up and throw it in the oven to bake up and get all melded together instead of putting it on the stove. So I threw it in at 400 for 15 min open faced and boy was it good!

Just a few picks of my snack prior to being thrown in the oven. Gotta love good ole garden ingredients :)
