Tacos are LITERALLY one of the greatest poor man's meals you can possibly come across. I mean you can pretty much put anything in a taco you have lying around the house and it's relatively fabulous. Just the other night my husband was feelin snacky so he warmed up two flour tortillas (because he can't STAND the corn ones which I adore and are so versatile because you can toast them in the oven to make your very own chips or fry them yum!) and then smeared them with a little sour cream and salsa for a tasty little snack. Although he did start out by putting sour cream and spaghetti sauce on first because apparently reading labels isn't important :)
I was on the playground monitoring my students at recess and in the back of my mind thinking about what to make for dinner. (Teachers are fantastic multitaskers which I am so thankful for.) Luckily I didn't have to multitask too incredibly hard because I had made a handy dandy list of anything and everything I could possibly think to put together to make meals after taking inventory of my cupboards, fridge, and freezer. This is an extremely important thing to do at the beginning of a week because it will save you panic when you are hungry and you get home later then expected. My list gave me turkey burgers from two nights before, the homemade mac and cheese, and panko and cheese crusted chicken with wilted romaine! See? Lists are great. So now the list has brought me to taco night. Which I'm totally in the mood for and I KNOW my husband loves them. But what I realized as I mentally scanned my fridge that I didn't have cheese besides ricotta or kraft singles. This probably wouldn't be the best fit for tacos. Fortunately I had great ground beef from the whole cow my husband's parents purchase a few times a year and have freshly ground then distribute it to all of us kids. I also have that awesome onion always waiting in my fridge, taco seasoning in my cupboard, salsa, and sour cream as essentials. See? Mexican is almost always hiding in your fridge by the way of condiments! If you don't have taco seasoning on standby you can always throw chili powder, cayenne pepper, and salt together or even just throw in lots of salsa and it still works!
So I brown up my beef and toss in the taco seasoning per the instructions, dice the white onion, and throw it in after the beef has come off the heat. I like my onions crisp. Then I heated my flour tortillas in a flat pan on the stove to brown them a tiny bit which I love and we were ready to begin! Layer the beef, salsa, sour cream, and a little romaine lettuce on top and you have yourself a relatively authentic taco!
Essentials to have in your fridge:
salsa
sour cream
tacos (I keep half the package in the fridge and half in the freezer to be used at a later date so they don't go bad)
Recipe:
1/2-1 lb ground beef
taco seasoning of your choice
white onion
romaine lettuce chopped
salsa
sour cream
flour tortillas heated in a pan on the stove
Brown the beef and toss in taco seasoning following instructions on the package. Chop up white onion and add after beef has come off the heat. Gently brown any size flour tortillas. Spread meat mixture, salsa, and sour cream and top with romaine lettuce.
