Turkey burgers/an empty canvas

So my husband and I are in the midst of buying a townhouse so we can stop throwing rent checks to the wind and actually put that towards something a bit more productive....and it is a lot of work! Many meetings with realtors and mortgage consultants all having to be done after work leaves very little time to eat well.

My husband and I finish up with the mortgage consultant later then anticipated. We were supposed to be able to go over and have a fantastically prepared meal by dearest mom but it was too gosh darn late on a Tuesday night. So we're driving home, it's 7:45pm, and I'm thinkin the frozen cheap pizza in the freezer isn't looking to bad right now. But, my husband puts in a request for turkey burgers. Well, gosh why not!? Turkey burgers are such a great empty canvas. You can make them spicy, savory, or sweet. I have added provolone and smeared them with pesto or reconstituted dried cranberries and mixed it in with rosemary and topped it with a garlic aioli to make some awesome burgers. But alas these things do not currently reside in my kitchen....so here I come to stare inside my fridge and freezer.

I have about 1/3 of a lb of ground turkey meat left so of course I make my man's burger a bit bigger. Fortunately Cub had a fantastic sale on their big fluffy potato buns awhile back so I don't have to deal with the puny little bleached flour flavorless kind. But what to put on them!? I have kraft singles as one source of cheese but I notice that I still have ricotta leftover from that gosh darn valentine's meal! Haha lucky me :) I don't want it to go to waste so I decide to cook up my turkey burgers and give them a great crust on the stove with just some simple salt, pepper, and oregano (my go to herb). After giving them a great crisp I slather them up with some ricotta, cut a few slices off the onion I ALWAYS have in my fridge and layer it on top, crack a little more fresh pepper on top and throw it under the broiler. I let that go for a good 2 1/2 min and then put them on their warmed up buns and throw a little mayo on them to tie it all together. They were pretty gosh darn good! The smoothness from the ricotta heated through along with the juicy and crispy burger with the slightly browned crispy onion was delicious. One thing I thought of after the fact was that I could have played around with the mayo. Maybe added a little balsamic vinaigrette or paprika. But pairing that with a walnut cranberry salad was mmm mmm good :)

Essentials to have in your fridge:
-onion (Any kind is great but I particularly like white the best. Only chop what you need and save the rest whole so that it stays freshest possible!)


Recipe:
1/3-1/2 lb ground turkey meat
ricotta cheese for spreading on top
sliced onion
salt and pepper
oregano

Form the burgers while squeezing a bit of the excess juice out and make them 1/4 '' thick. Put salt, pepper, and oregano on each side of the burger and place in a pan on the stove that has already been preheated on med/high. Let them cook on each side for approx 4-5 min and then transfer to a baking sheet, slather with a good amount of ricotta cheese on top, garnish with a few slices of onion, and broil for approx. 2-3 min. Then take them out, put them on a good soft flavorful bun of whatever you got, and throw a little mayo on!
