When I was at Walmart last month I totally bought canned tuna as well as something new for me....canned chicken. Never in my life have I eaten canned chicken or bought canned chicken. But there is a first for everything. Since I am always trying to think of ways to adapt less costly foods and make them into something delicious I figured this would be a fair challenge.
I thought I was going to be so awesome and bike to work on Wednesday but I got a terrible night's sleep and woke up too late bike so I threw my bike in the car with the intention of riding my bike home that night and then back to work again the next morning. Well, after working ten hours I walk out at 6pm all amped up and ready to ride my bike home only to have to deal with slipping gears which I am not bike savvy enough yet at this point to know how to fix. So after four miles of riding trying to figure out this issue and getting it semi smoothed out I am finally starting to get in a groove and get my ride on when what happens.....I get a flat. And the only thing I DON'T have yet in my kit is a TIRE!!!!! Anna Anna Anna...what goes on in your brain sometimes? I have to call my knight in shining armor to come pick me up and by the time we get home it is 7:15. Now I barely got to ride, I don't get to ride the next morning, and I have to still make dinner!!! All the meats are frozen solid in the freezer, I don't want to take the time to cook pasta or mac and cheese so to the cupboard I go looking for inspiration. And there it sat.....that can of chicken. What can I do?
Well I have bread in the fridge so I grab it out, pull out some black pepper and salt, open and drain the can of chicken, chop up a little red onion, grab some mayo, and go to my awesome herb garden outside and snatch some rosemary. All the ingredients needed for a great summer chicken salad!
All I needed to do was combine all the ingredients with the chicken and make sure it was mixed enough using a fork to help tear the larger pieces of chicken and then served it on a few slices of wheat bread. We also had a half of a green pepper left so I sliced that up and served the sandwiches with the green pepper and dollop of hummus! What a fantastic, quick, and easy meal for the two of us to end the day with. Thank you canned chicken I was pleasantly surprised!
Chicken salad:
-four slices of your favorite bread
-1 can precooked chicken (would work just fine with a fresh boiled chicken breast shredded)
-1 slice red or white onion (red adds great color if you have it)
-1Tbsp fresh or dried rosemary, thyme, oregano, basil (use what you have!)
-1/8 tsp salt (if preferred. the canned chicken already has a good amount of salt)
-1/2 tsp black pepper
-3-4 Tbsp. mayo
Dice the red onion, finely chop the rosemary and then combine these ingredients with all the rest in a bowl. Toss in chicken and mix until well combined. Divide between two slices of bread, top with another slice, and enjoy!
