I myself don't have much experience cooking with pork chops but I had a coupon from Festival foods for buy one package get one free so I couldn't pass it up! They were a nice pink color and look tender and full of cooking possibilities. When we got home from the grocery store I decided to try my hand at cooking these bad boys for dinner!
I had bought nice fresh buns while I was at Walmart and I had some fantastic fresh loose leaf lettuce that Brian's dad had given me earlier in the week from his garden so I decided to try making pork chop sandwiches! I've never had this at a restaurant but I love seeing what I can make into an awesome sandwich. I looked in my fridge and saw that I had just an 1/8 of a red onion left which would be a perfect accompaniment to the sandwich and I had just bought fresh mozzarella for $3.00 from Walmart! I now officially had a sandwich.
One of my greatest pet peeves is when the meat to bun ratio is off. You can't have too much of either. I thought the pork chops might be a little thick for the bun so I sliced one pork chop in half. (I am a big fan of doing this for any kind of meat you are using when it is going into a sandwich). This made for approx. 1/4" cuts of pork chop for each sandwich. I put a little olive oil in a pan, sprinkled the pork chops with salt and some "Montreal" seasoning. Whatever you like on it would be fine. Salt and pepper, fresh herbs and garlic, etc. I fried these up at 5 min a side. While they were cooking I prepped all my other ingredients to go along with it.
I had just bought 12 ears of corn at "buy 6 get 6 free" from Festival so as I cooked the pork chops I KNEW we'd be enjoying fresh corn along with our meal. I wanted it to be simple so I just wrapped each husked ear of corn in wet paper towels and threw them in the microwave for 3 min. It comes out so perfect it's ridiculous how easy it is :)
To finish I put two slices of mozzarella on top of each pork chop to get nice and softened, then slid them onto each bun, squirted a nickel size mayo on each one and done. Let me tell you....they were so stinkin good. Couldn't even believe it.
That corn and those sandwiches brought us straight into a delicious and relaxing summer night.
