Pesto and Productivity. My most and least favorite things…...

I hate, ok hate is a strong word, no I hate being measured by my productivity.

It's just…..gross. Mostly because I'm really terrible at being productive some days. My job….not one of the areas I suffer with this. I have this ridiculous problem that my mom and dad taught/passed down through genetics of giving 110% at all times in the area of your job. I mean, they tried to pass it in other ways like in the areas of schoolwork, being on time, keeping things clean, but my productivity in those areas never really blossomed.

Any whoodledoodle, as my buddy Maritza from Tree House taught me to say. Sometimes, due to my lack of productivity in the areas most associated with adulthood, I tend to feel….oh what's the word? Ashamed? Guilty? Lame? I dunno I feel something akin to those describing words and I feel the need to be productive so that I can continue referencing myself as an adult. Otherwise I'm an overgrown kid and those people always get made fun of and are the morals of stories in movies and I don't want to be that. Just care free. Because that's cuter right?

So on my way home from work I told myself that I was going to clean out my closet and get rid of every single shirt that I haven't worn in the last three months. You see, I've throwing most of my clothes onto the tops of our shelves in our closet, well we really only have one shelf. I've been throwing all crazy because telling/lying to myself that I was to "organize" my closet so all my things would get messed up anyways. And I realized yesterday that I really do better with simplicity in my life. We don't mess around with the top sheet on our bed (our comforter does the trick so it's unnecessary), I usually cook with one knife and one pot for dinners (don't worry I keep a sink filled with hot soapy water as my assistant), and I try not to buy stuff for my house so I won't have to keep it clean. See? Simple ;) That's what lead me to clean out my closet. And two garbage bags later I was feeling much lighter in my life. I also realized that I have gotten a SHOCKING amount of t-shirts for free and MOST of them are not as cool as initially perceived. But then, this strange thing happens, I get inspired by my productivity. I get on a roll. In the zone. And I take over. I went to Target and bought TWO, that's right TWO ACTUALLY cute DECORATIVE and COMPLETELY unnecessary pillows to put on our bed. Now my bed actually looks kinda cute! I was so productive at Target I realized all these things that we needed to get that I've been neglecting. Which then led me to head up to my in-laws to go pick insanely awesome veggies because our fridge is getting empty and I decided to be productive in another way while I was at it.

See?? Man I was on fire yesterday!

I ended up running errands, cleaning closets, picking raspberries with my father-in-law, gathering fresh veggies from the earth, cleaning bathrooms, dishes, laundry, AND the "piece de resistance", I made a smashingly good meal. Which I will momentarily share with you…..in photo form!

So moral of the story is. I can be a lazy bum sometimes in certain areas of my life. I can be immature, only seeking out the next adventure or what will serve me best in that moment. But I cannot deny the refreshing and satisfying feeling of taking charge and putting things in order. I know my burden feels a little lighter after and I feel like I have earned that next adventure a little more. That I may not be the insanely talented multi-tasking, do-it-yourselfer like my mom, but when it's needed….you better believer I'm gonna get it done. AND still manage to bring you a new tasty recipe for you to try at your next meal!

Just remember, you got this boo boo. Get. It. Done. Then go play your heart out!

Pesto Pancetta Chicken with Cauliflower Rice

What you will need:

(for the homemade pesto)
-15-20 basil leaves (or store bought pesto)
-olive oil
-salt
-pepper
-parmesan cheese

-food processor

(for the chicken)
-brussel sprouts
-2 1/8" thick cut slices of pancetta
-5 small chicken tenderloins
-garlic powder

(for cauliflower rice)
-one head cauliflower


Pulse your basil leaves, with about 1/4 of olive oil, 1 t salt, and 1 t pepper.

Add 1/2 c parmesan cheese and pulse until it's all 
completely combined and looks like this….
Voila….pesto! No need for pine nuts!



Dice your pancetta and throw it into a hot 12" pan and fry it like bacon.



As the pancetta is frying cut the bottoms of your brussel sprouts 
off and then chop in half or quarters (if they are big) and toss 
in the pan with the pancetta.

Now your mouth should be watering profusely.



Pour the pesto mixture into a bowl. Now chop your cauliflower into smaller pieces 
and then pulse in the food processor until it looks like tiny grains of rice. 
You may need to do two to three rounds.

Throw the brussel/pancetta mixture into a bowl and then toss your chicken, 
cut into fajita style strips, into the pan with 1/4 of your 
fresh pesto mixture you just made!



After the chicken is cooked through add about 2 cups of the 
cauliflower rice, then another 1/4 of that fresh pesto, stir and let sit for a min. 
Stir occasionally as you let the cauliflower cook through, approx 3-5 min. 
Then add the brussel sprouts and pancetta back in and you're done!

Serve in bowls or plates immediately and top with some fresh Parmesan! 
Healthy and delicious!
