$#it's About to Hit the Fan Meals

Did you know it's really hard to type with a cat in your arms? Spark Plug has been obsessive about being ON me every time I put my butt on any flat surface. Whether it be a chair, the floor, a couch, or even the toilet seat. TMI? All well.



But I digress.

Lately breakfast has been the only thing I ever actually feel like cooking. And by that I mean only on Saturday mornings. Hahahahaha ohhh life. But it just so happens that I wake up approximately two hours or so before my husband (and you can't expect a girl not to eat for two flippin hours after waking up!?) I mean I could just pound lots of coffee to fill my tummy. Unfortunately then I get those crazy twitches because of the caffeine high, due to the fact that I don't drink much coffee in the first place, and then as I'm coming down off the high I become a raging beast insane with hunger. So generally I just eat a bowl of cereal. If I could stave off the hunger and make a decadent pile of pancakes or a wicked tower of waffles they would more then likely go untouched by my husband. This is due to the fact that he likes two things in the morning. Black coffee.....and scrambled almost burnt eggs with salami and onion. THERE MUST BE NO DEVIATION FROM THIS MEAN. EVER. Try and put it in a corn tortilla just ONE time and see what happens.

Although my husband, with his wonderfully diverse personality, does not share my preference for breakfast food but he does enjoy my cooking a great deal. He will eat the pancake if I put it in front of him and give him a guilt trip about it. But he will usually only eat two which just makes me feel guilty for eating five and what's the fun in that!? His one expectation, as I've shared before, is that I cook for him on a regular basis. This is not demanded or argued over. He just regularly reminds me of this truth. (I really REALLY should have established the gravity of his words before we got hitched. I mean the guy brought it up in our pre-marital counseling he was so serious about it. How did I not see that!?) And when a baker gets home from their shift after prepping hundreds of sweet treats, lifting 50 lb trays all day, walking a few miles back and forth from the fridge, getting filthy with every ingredient clinging to your body......ya kinda never ever have the craving to come home and whip up a 3 course meal. Or even a one course meal for that matter.

Then there's laundry staring you in the face, the dirty house is just yelling at you from the corner of your eyes, and your inner thighs and love handles are not so subtly reminding you that you haven't worked out in close to forever and a day. Your cat wants attention, your man wants attention, your God DESERVES attention. And THAT is what usually catches me last.

So, when I walk in the house and change my clothes (and shower....on occasion). I begin praying my way through my evening. I pray for my family as I tidy the house. I pray for my friends as I spend time with Spark Plug. I pray for my husband as I spend time with my husband. And by the time the world is a little bit back in order I find myself more likely then not ready and able to whip together something for us to eat. What I need to remind myself most often is that the requirements from my God are not to define myself by anyone else's standards. So being Suzie Homemaker is continuously kicked outta my brain. Instead I define myself by who God crafted me into and who my hubby adores. Which means I whip up crafty and easy meals a few times a week and improvise the rest of em!

Here are a few of those super simple crafty meals that require little to no effort so that I still have time to watch a few shows with the hubs before bed ;)

The Cheese and Cracker Plate:

It couldn't get any simpler then this!

You should have a few of your favorite cheeses as a staple in your fridge. I really like nice hard cheeses so I usually go for sharp aged cheddars, Pecorino's, anything Irish. I love Kerrygold's Dubliner cheese. 

You should also have some solid cheese crackers around. This is also a great backup app ANYTIME someone comes over. I mean you whip out a little balsamic vinegar, veggies, cheese, and crackers and people are gonna think you are the master chef! I love crackers with rosemary and sea salt but anything that you love is perfect!

I cut up a bunch of cherry tomatoes and sprinkle them with salt and pepper but you can also slice just about any veggie. Cucumbers would also be great. As well as olives or sundries tomatoes!

And if your hubs is complaining about it not being enough grab a few cold cuts outta the fridge. We pretty much only ever have salami but use whatever! It'll satisfy you both!

Strawberry Goat Cheese Salad:

Super duper crazy simple. Grab your salad mix. Whatever you got. Slice a few strawberries. I also throw in cucumber. Continue to add any other veggies you want. 

Then throw in a few chunks of goat cheese (if you like it.) Otherwise throw in some fresh mozzarella or even a nice Parmesan would work fine! 

Candy your own walnuts, or in this case, throw on some store-bought ones. Then finish with a nice Champagne vinaigrette or pomegranate vinaigrette and voila! 

Again if the hubs complains just brown up a chicken breast or tenderloin in a pan and slice it over the top for him!

Chilaquiles in a jiff:

This is a ridiculously simple meal. Just grab your favorite tortilla chips. When we are splurging it's Whole Food's store brand fresh tortilla chips because they are nice and thick with sea salt on them. 

Then I will generally boil some chicken and shred it into some salsa. I like Tostito's Restaurant style salsa. It is the one with the purple lid. Great flavor and nice and thin. More autentico! 

Put the chicken on top of the chips along with shredded cheese, tomatoes, black or pinto beans, avocado, cream cheese, you name it you can use it! And to really knock it outta the park throw a over easy egg on top. 

This will MAJORLY satisfy your appetite AND you will look like Chef de Cuisine without all the hassle!

So you be YOU! If you're not dying to cook an extravagant meal every night of the week but you still want to show love to your family try one of these! And if that's STILL too overwhelming skip the laundry ;)
